Can I freeze the cheese?
In general freezing cheese is not recommended. Texture and flavor are altered during the freezing process. If you MUST freeze the cheese we suggest shredding it first and wrapping it in air tight zip-lock freezer bags. Cheese that has been frozen can still be used for cooking with little or no flavor change.
How should Grafton Cheddars be served?
Always bring cheddar to room temperature before cutting or serving; this allows for maximum flavor. Cheddar goes very nicely with crusty breads, pear slices, grapes, olives and apples.

Is Grafton Cheese Expanding?
Yes we are! The success of our cheddar has created a need to increase production of our cheese. We are building an additional plant at the Retreat Farm in nearby Brattleboro, providing us with an optimal location to grow the cheese business. As a subsidiary of the Windham Foundation, this new location also allows us to further the Foundation's mission of land conservation and historic preservation. The new plant will also include a full-service artisanal cheese shop as well as a cheesemaking viewing area.
Our Grafton location will remain and will serve as our flagship store and headquarters! The new plant is scheduled to be completed by early summer 2008.
