Our Cheeses

The Grafton Village line includes distinctive cheddar cheeses that have been aged for up to three years, plus a selection of flavored cheddars. Our Cave Aged line is made of unpasteurized/raw cow, sheep and mixed milk original cheeses that are cave-aged at our Grafton facility and vary with each season.

All of our cheeses are free of artificial hormones and antibiotics. The rennet used is microbial, making our cheeses vegetarian approved.

Grafton Aged Cheddar

Our Grafton Village line of aged cheddar is handcrafted using traditional methods, using primarily Jersey cow’s milk, known for its high protein and butterfat content. Our flavored cheddars are done so with natural ingredients. Our traditional cheddars are aged from one to three years, sometimes longer. The more the cheese ages, a stronger “bite” is developed.

Cave Aged Cheddar

Vermont cheddar cheese is where Grafton started. Taking us beyond our roots in cheddar, these small batch cheeses are carefully matured in our aging caves in Grafton. Our Cave Aged line includes unpasteurized/raw cow’s milk, sheep’s milk and mixed milk cheeses that evolve with the seasons.

Clothbound Cheddar

Grafton’s signature Clothbound Cheddar is wrapped in cheesecloth and cave-aged for a minimum of 7 months, a traditional method used for centuries in Britain and the pre-industrialized US. Aging in cloth allows this cheese to take on a deeper variety of flavors than its plastic-aged counterparts, and at a younger age. The texture is firm and creamy with a tendency to crumble.

Clothbound Cheddar has a mottled gray rind with aromas of cave, mushrooms, and fresh butter. Flavors are similar to a traditional English cheddar: grassy, nutty notes dominate with some lemony accents and a smooth, lactic body that carries on through a meaty finish.

Best served as a table cheese, or mixed with younger cheeses to add depth to a melted blend for cooking. Create a ploughman’s lunch of Clothbound Cheddar with a spicy tomato chutney, cured meats and pickles.

PAIRING

Old-World classics such as Chablis, Pinot Noir, Riesling. Wheat Beer, Red Ale. Dry or off-dry cider.

USES

Table cheese, paired with dried fruits, nutty bread, dark berries, grainy mustards. In cooking, this cheese melts well but boy, is that a treat in a cooking application.
